Why does bread get hard when it gets old?
a lot of people think its because the moisture evaporates, but actually its because it gets more moist and the sugar and the starches react to water by crystallizing, thus becoming hard.
you mean left out, the moisture in the bread evapoates, like if the bag isnt closed it starts getting hard
Because it's spoiled?
When the air gets in the bread the moisture in it dries it out
It's either just because of time or mold
It gets STALE
David has it right. The bread becomes dry.Being dry and hard does not mean its spoiled.That's what turkey stuffing is made with.
Oh I know this my dad works for a bread factory but basically it just dries out
