Why does bread stay fresh in the freezer?

I have to have a scientific answer for a science project due tomorrow and my bread stayed the freshest the softest and grew mold after defrosting it from the freezer after 2 weeks. why?

When you keep bread in an airtight bag in your freezer, all the molecular breakdown is stalled. The oils and minerals present in wheat flour used for making the bread reduce their activity to almost nothing. However, when you defrosted the bread, the molecules became active and that is why your bread grew mold.

Freezing also stops evaporation of moisture, which is why it was not dried out.
