Does anyone from Antigua West Indies know the recipe for Tart and Bun Tart?

THe tart is soft on the outside and has a coconut filling on the inside

I checked these websites, none had a recipe for what I'm looking for. There were recipes for coconut tart, banana tart etc but not the special tart made in Antigua West Indies. Does anyone out there know the recipe?

I'm still looking for coconut tart, which is the one with the firmer shell. The soft one is Bun Tart...Here's the recipe:

Bun Tart


1 or 2 coconuts

8 ozs shortening (Crisco)

4 ozs margarine/butter

5 lbs flour

6 ozs sugar

1 1/2 pt milk

2 eggs

3 ozs yeast

Pinch of salt


To make Coconut mixture ...

Cook for 15 to mins: 1 or 2 grated coconuts, cinnamon powder, all spice and 6 ozs sugar [to own taste -- may add vanilla & almond essence]

To make dough:

? Warm milk, and mix with shortening, margarine/butter, eggs and yeast

? Add flour, 2 tbsp sugar and salt

? Knead dough -- set aside for 15 mins.

? Knead again and set aside for an additional 15 mins

? Cut dough into 2 1/2 oz pieces and roll out 1/4 inch thickness

? Place coconut mixture in center of dough pieces

? Roll pieces -- place seam at bottom

? Leave to set for 20 mins

*Mix sugar and water, and glaze before placing in oven

? Place roll pieces on baking sheet

? Bake at 350 degrees

Note: To half recipe - use 5 cups of flour to half of ingredients
