Suet was used for cooking to make wild game more palatable, and to provide fat necessary for baking cakes, bread, etc. Think of Crisco, only made from beef fat instead of vegetables. Darkhalo310 is correct about the candles and soap, although the candles were horrible, smoky things.

Wagon wheel axels were lubricated with animal fat on the wagon trains heading west. They carried as much fat in barrels as they did water. It may have been fat from cattle
