Is there a way to make spiced hamburger cheese dip using cheddar cheese instead of Velveta to avoid clumping?
Cheddar can get oily sometimes. I put a little milk in my dip to keep it smooth. Plus I add salsa to add more flavor and moisture.
If you want to make a cheese sauce first make a white sauce. White sauce is milk thickened with rue. Then add your shredded cheese and allow to melt over low heat. I do it all the time.
