I have a 3rd gen iPod touch. Can I sign out of my email on it?

No it just stays like that on the app you have to completely erase the e-mail to get out.

Go to settings>mail,calendars>sign out i think

Well I have a 2nd generation and I just go to setting then my mail. Click on the email that you don't want and then you should be able to sign out.
