Roasted vegetables taste the best to me and when drizzled with olive oil salt and pepper it is hard to beat. Making it more appetizing you could combine several together, say, broccoli and halved grape or cherry tomatoes. If you like hard boiled eggs you could top it with grated hard boiled egg. Or you could grate cheese on top. The possibilities are endless.
One of my favorites is a Southwest style medley I make with corn, black beans, red peppers, pasilla peppers,onions, garlic, mushrooms, and sun dried tomatoes. I saute everything together in extra virgin olive oil except the corn, black beans, and tomatoes, which I stir in last. It's quick and easy to make, and tastes great.
