I am making homemade lasagne for gift giving. Should I make and freeze or make, bake and freeze or make and not bake and keep in fridge?

Basically I don't know if I should bake it before giving.

Yes, bake before giving. Lasagna freezes very well, if allowed to cool completely before packaging for the freezer and it's wrapped well. I cut it into pieces after it has a chance to "set up" so it's not so sloppy, let it cool all the way, place on pieces of plastic wrap which I wrap snuggly around to limit exposure to air, then place the wrapped pieces in a freezer bag. If you don't let it cool completely, you'll get condensation and end up with soggy pasta. Also, if it's exposed to air in the freezer, it'll acquire that "freezer taste" and not be so good. Last, be sure you don't over cook the pasta. If anything, undercook just a tiny bit so it'll stand up better to freezing and reheating.

Cover with foil, Bake in preheated oven at 350 F (177 C) for 25 minutes
Remove foil and bake uncovered for another 25 minutes. Remove from oven and allow cooling for approximately 15 minutes. Do not freeze it.

I think it would be best to make and bake since it is a gift...the idea is to have the recipient enjoy the gift and some might view baking as work...so to be safe, bake it...great gift idea btw!
