How were the early maps made?

How did the early cartographers make their maps without instruments, and still believing that world was flat?

Thru the use of the Compass and Sextant and an incredible amount of 'Reckoning'.

Sometimes, on the area of the map that was unknown, the cartographer would draw a sea monster and write the caption "Here be dragons" with the idea that if no one knows what is out there, there must be something really terrible there that kills any explorer!
