I believe what you are looking for is what they call an acronym ... Which stands for *** ACRONYM: Abbreviated Coded Rendition Of Name Yielding Meaning :-)

I think what your thinking of is an acrostic poem.
Perhaps it looks like this?
Only the first letter of each stanza
Eventually spells out a word
