Take a black iron skillet and heat it in a 400 degree oven, prepare your whole bird with a rub of seasalt, olive oil, and peppercorns. When the skillet is good and hot, place in your bird and return to the oven for 35 to 40 minutes. Do not open the oven, just turn off the heat after this time, and let the bird rest in there another 20 to 25 minutes. She will be perfectly roasted and oh so juicy!!!! Enjoy!
