The difference between these two method lie primarily in the texture. The classic vanilla tend to be smoother and silkier due to the emulsifying property of egg yolks, the Philly vanilla tend to be a bit firmed and freezer harder and lighter tasting also it's quicker to be mix together before chilling and freezing.
The difference between Philly vanilla and Vanilla ice cream is in the ingredients used. Philly vanilla does not use egg-based custard like the common vanilla ice cream. Philly has the best flavor, body texture, appearance and color according to World Dairy Expo.
