You could try some Moroccan couscous salad. Its very healthy and doesn't take more than 10 minutes to cook. Couscous is a type of rice. Just follow the instructions on the pack to cook it. Once the rice is ready you could add sliced cucumber, capsicum without the seeds, vine-ripened tomatoes or just some dried cherry tomatoes, some pomegranate jewels that will give it a twist and chopped parsley. (all cut and prepped the previous night). You could also add diced red onion if you like. Season it with some salt and pepper and a dash of olive oil and lime. It is quick, tasty and healthy and a great option for lunch or dinner.
