The stuff that comes out the back of airplanes is known as the contrails. They are created by the airplane's exhaust that increases the amount of moisture in the air, which can push the water content of the air past saturation point. It is ice crystals formed by the water vapor in the exhaust freezing at high altitude. All hydrocarbon fuels emit water vapor as part of the exhaust gases
