With a small roast like yours, bring it to room temperature and preheat oven to 450F. Coat the roast with a little olive oil, salt & pepper. When the oven is ready, put in the roast. Let it cook for 15 min, then pour 1/2 cup of chicken broth or white wine IN THE PAN, not over the roast. Cook another 5-10 minutes until it is cooked to your liking. If you have a thermometer - 135-med rare, 145-med, 155 med-well. Juice makes excellent gravy. Good luck!
