It's after midnight and I can still see white clouds in the sky. It should be pitch dark, I see stars, but why do I still see the clouds?

Clouds are actually quite reflective under the proper circumstances. You are likely seeing the lights from cities, cars, and other ground-based light, with the addition of ambient starlight and such.

The ambient light from the stars (there is no moon out tonight) allows you to see the clouds.

I don't know about you, but right now I'm seeing clouds in the pitch black night sky because it is raining. Hard.

if you live in a city, there's usually cloud cover at night too because of the heat and the moisture from the city. the light from the moon or stars could make the clouds appear white. Or more likely, the city lights reflected off the clouds would make them appear bright

You are seeing light reflected from street lighting or other man-made sources.
