Grilling is the healthiest option and provides a more delicate, natural flavor.
Step 1
Scale and clean the fish, if needed. Rub the cavities of the fish with the lemon quarters for flavor.
Step 2
Mix the oil, lemon juice, salt, pepper, garlic and parsley in a bowl. Brush the oil mixture on the fish.
Step 3
Grill the gar, turning it frequently and adding oil to be sure it does not stick. Cook the fish for about 15 minutes.

The healthiest way to cook grilled garfish is to brush garfish fillets on both sides with butter, season and place skin-side down on an oven tray. Then, grill on a low shelf for 2 minutes. Lastly, divide fish between plates, spoon over salsa and serve immediately.
