It is your fight of flight response, your body jumps to make ready and your brain tunnels on the threat. it is a byproduct of the evolution of our species.
When we startle we come to attention, assess the treat and either fight or run.

Maybe its like a nerve and our brain just makes it jerk so that make us jump when we get scares
All ways wondered that my self ;)

Its a reflex. Same reason why your foot is supposed to kick or lift up when the doctor hits you in a certain spot in the knee
