What happens in the body that causes cramps?
The buildup of lactic acid in muscles can cause cramps, as can lack of potassium.
Well one of the obvious is blood loss.

Lactic acid build up in muscles during exercise.
Sometimes working out too much at one time, menstration, eating too much, too little, gas pains, and sometimes just random muscle contractions.
a low potassium level in your blood
Don't forget dehydration.
During the summer in my childhood we kids were warned not to go back into the water, right after eating, we had to wait an hour. This was to prevent cramps, I never understood this.
