Do it personally, and do it with honesty and sincerity. Say what you feel and what the opportunity means for you. This person has evaluated for what you are and this opportunity says it all. He will know what you want to tell him right away!!

You may have been deserving of it and the thanks came from believing what that person(s) saw in you. And in doing that was the thanks by taking the opportunity that was giving to you. As for thanks what was giving should never be abused or taking for granted. Never sell yourself or anyone out. This is in social, work and home life. Because like the wind from butterfly wings, "Everyone and everything will be effected." By doing you best your very best speaks loader than mer words. Action speaks. Doing your best shows appreciation.
email?? Are you serious? Something like that requires a much more personal touch. A thank you in person as well as a hand written note would be much better. Then do all that you can to live up to their expectations.
A face-to-face thank you and doing as well as they expect on the job. If you don't see them, a phone call or handwritten letter of thanks for the opportunity and that you will take full advantage of it.
