Are red cars more likely to get pull over by the police & have higher insurance?

Neither is it true that red cars are more likely to get pulled over by the police nor they have higher insurance. The reason why people say that red cars are more likely to get pulled over by gendarmes is because red is a flashy color that would always catch they eye whenever it passes. On the other hand, what determines your insurance premiums is the make of the car, your driving record and other factors that insurance companies specify to you.

We have driven our red car for 5 years and have never ever been pulled over.

My sister has a red convertible and she has never been stopped either.

Your friends were pulling your leg or that is their thought or someone was breaking the law.

I haven't heard the insurance part. But I have heard that because red cars stand out more, as a rule they get pulled over or ticketed more for traffic violations. But, if you really want something, and it fits your budget, I don't see a big issue. If it's what you want, get it, just make sure to drive safely and be more aware of your surroundings when driving!
