Green chile stew. You will need: pork roast, canned or frozen green chiles, potatoes, carrots, green onions, garlic clove, broth or stock, salt, pepper.
Cut the roast up into cubes, heat a heavy pan, add a lil oil and brown the pork a lil on all sides. Goal is to get some color and crust on that meat. Transfer to a crock pot. (Pork will not be cooked thoroughly). Peel the potatoes and cut into quarters, add to crock pot, along with other ingredients. Cover and cook on low for about 5 hours. Taste and add seasonings as needed.
Chicken stew is the easiest. Boil chicken in water. Add spices. Whatever you like to taste. When done, about an hour, de-bone chicken. Add potatoes & vegetables of your choice. Cook further until done. Salt & Pepper
