Why is vanilla ice cream white when vanilla extract is brown?
They probably add a lot of food coloring in it.
Because you only need a little bit for the favor and milk is white. I've used vanilla powder that was white.
Very little is used: 1 1/2 tsp to a recipe of 2 cups half and half, 5 large egg yolks, and 2/3 cup sugar. It is spread out among all those items and doesn't show up brown. Not enough is used.
Fresh vanilla is very potent so you are seeing mainly the cream color.
