Mango
Red pepper
Tomato

ALL cut up into bit sized pieces!!

All the above. But.... Mince carrots to add sweetness, and to tone down the peppers in between bites.

Authentic Mexican salsa -You will need tomatoes, green tomatoes cilantro, onion, garlic and jalapeo or Serrano peppers. Put them in a fry pan with a little oil and roast till soft. For a quicker process cut tomatoes (both kinds) in half or quarters depending on size. Once done peal everything and mash till desired consistency. Salt to taste and if super think add a little water.

My fav is very simple

fresh tomatos
onion
tomatillo (small, firm mexican green tomato that comes in a brown papery husk)
jalepno or serrano pepper
cilantro
salt to taste (NO pepper or garlic and esp no vinegar or sugar)

chop everything fine and mix together or mix in food processor for finer salsa. Very fresh, not sweet or sour. Cilantro, tomatillo and hot peppers give mexican flavor!
