It it's simplest format - String Theory says that everything ultimately is made from infinitesimally small units called "strings". An atom is made from protons, neutrons and electrons. They in turn are made up from quarks and sundry other wierd names. The tiniest subdivisions of an atom - any atom - can be broken into smaller bits in the Hadron Collider, until - when nothing smaller comes out - the ultimate bits are: "strings." And if you want 'wierd' check up on THEIR properties. They don't even necessarily exist in this time or dimension!!
It is a study in particle physics, it try's to link the fields of quantum mechanics and general relativity. It's very involved you should just use the "search the web" section of Ask to find out more details.

It's (I think) the idea of the tiniest of particles vibrating at certain frequencies producing what we have in our universe. The same way a guitar string vibrating at different frequencies produces different notes, Different string vibrations produce different results.
To allow string theory to work it needs 9 or 11 different dimensions. We know of 4 (don't we??)
