Why is vanilla ice cream white when vanilla extract is brown?

Vanilla ice cream, if it is white, is most likely flavored with a synthetic vanilla. Super premium brands generally have a slightly off-white color to them. Because vanilla, like most extracts, is concentrated it only takes a small amount to flavor the product which will give it an off-white appearance rather than the dark brown color of vanilla extract. Brands like Haagen-Dazs Vanilla Bean are not only off-white in appearance but also have small amount of the bean itself mixed in.

Vanilla extract is the actual vanilla syrup thar wad directly extracted from vanilla beans.
