Ive just found cheese in my fridge that as being there for at least a year, it was sealed in plastic! can i trust it?

absolutely okay!!! cheese is good for over 10 years. just eat it without looking at it or smelling it. nothing bad could happen.

You can eat old aged cheese as long as it hasn't been opened or subjected to temperature change. That being said I probably wouldn't.

If it is Velveeta, it will outlast you.
Cheese makers routinely store cheese for up to four years. If it is $20 a pound,
I'd chow on it in a heartbeat!
