First and foremost, check with your doctor if this is persistent. This could be an underlying medical condition and shouldn't be ignored.
For "home" remedies, avoid salt. Too much salt will cause edema (water retention). You can also drink lots of water or green tea to help rid the excess water. Keep your legs elevated as soon as you get the chance. Too much standing could be a culprit for your retention. Your local pharmacy should offer some type of water pill that helps rid water too. Good luck!
One dose of salt from French Fries isn't enough to cause edema, although continual use of too much can. If you cannot do without salt, try a salt substitute containing Potassium Chloride rather than Sodium Chloride [regular table salt]. You could call this a "home remedy". I have leg edema but it is a side effect of diabetes for which you should get tested. Raising the feet is a good idea along with any exercise, even walking. I also take a pill do get rid of water which you may require if your Physician says so.
