From what I am told, the logic behind putting coffee in a freezer or fridge was to preserve the moisture in the coffee which helps preserve the flavor. However the counter point has been that once you subject the coffee to water when brewing you are in effect returning the moisture to the coffee releasing the flavor. Ever hear of freeze dried coffee (as in dehydrated coffee)? Ultimately your taste buds will resolve your question.
Some say yes, some no. I think that putting it in the fridge or freezer dries it out. I tend to buy expensive coffee and the storage instructions say to store it in a sealed container, in a cool, dry place. None say in the fridge or freezer. It also says for best flavor use within 7 days of opening.
