Is 7 minute icing supposed to be super fluffy?
Just made no cook 7 minute icing for the first time... Mixed together 1 1/2 egg whites, 6 Tbsp. sugar, 1/4 tsp. vanilla, 1/2 Tbsp. light corn syrup, 2 Tbsp. boiling water, beat on high 7 minutes. Just needed enough for a dozen cupcakes and still had leftover icing. Is it supposed to be this fluffy? I feel like I just made homemade Cool Whip, which isn't really a bad thing, although for these cupcakes I think something a bit thicker/firmer would be better. Also, anyone have any suggestions for making the icing thicker without altering the flavor?
