My Divinity didn't set right?
So I made Divinity yesterday. I didn't have a candy thermometer, so it could have been that, buy anything else? the sugar was dissolved into the water and corn syrup and it had been cooking. in the end the mixture was almost to the point of boiling when I took it off. the egg white were beaten into a stiff peak. When I poured the mixture in a tried to slowly but now too slowly because I didn't want it to cool. I know I did something (or multiple somethings) wrong somewhere. Help? Any tips or ideas?
