Does anyone know WHEN people began using lemon or lime zest in their cooking.

20 or 30 years ago, you never heard of "zest" being used - but this century ALL the TV cooks are using it. The references are all telling me how to make zest - I want to know WHEN it started to be the "thing to do."

they didnt really have tv cooks then, and as far as Im aware the zest and peels of lemons limes and oranges have been used in cooking for ages, particularly in oriental and indian cuisine. the "holy trinity" of oriental cooking is sweet, sour and spicy. chili lemon and perhaps oranges.
