Chanukah -- the eight-day festival of light that begins on the eve of the 25th of the Jewish month of Kislev -- celebrates the triumph of light over darkness, of purity over adulteration, of spirituality over materiality.
When they sought to light the Temple's menorah (the seven branched candelabrum), they found only a single cruse of olive oil that had escaped contamination by the Greeks; miraculously, the one-day supply burned for eight days, until new oil could be prepared under conditions of ritual purity.
To commemorate and publicize these miracles, the sages instituted the festival of Chanukah. At the heart of the festival is the nightly menorah (candelabrum) lighting: a single flame on the first night, two on the second evening, and so on till the eighth night of Chanukah, when all eight lights are kindled.

Hanukkah, which is also known as Chanukkah, is a Jewish festival that is celebrated for eight days and nights. The festivities start from the 25th day of Kislev. The festival is held to commemorate the rededication of the Jerusalem Temple in 165 B.C.E. Read on from judaism.about.com/od/holidays/a/hanukkah.htm

Chanukah is not like Christmas as it is not a holy time. It's a festival which in olden times ushered in winter season and celebrated the miracle of the survival of the Temple.

It celebrates the miracle of the lights. The Jews where being oppressed by the murderous Antiochus IV Epiphanies, who desecrated and just about destroyed the temple. There was a priest named Mettithius who had five sons. One of his sons was named Judah. Judah decided to stand up. He earned the nickname Maccabeus, meaning the Hammer. He gathered up a band of followers who called themselves the Maccabees. They drove back the armies of Antiochus and his allies and reclaimed the temple on the 25 of Kislev in the year 165 b.c. There was only enough sacred oil, which was supposed to be constantly burning, for one day. Well, it was going to take eight days to make more. Miraculously the one day supply lasted the whole eight days. That's why it lasts eight days and why they light the menorah (kinda like a candle stand with nine branches; one for every night and one to light all the others with) every night. Because they reclaimed the temple on the 25 of Kislev, that's when it starts. Kislev is their last month of the year, so it coincides closest with our December. But it doesnt line up perfectly, so on our calender it can be different every year.
