It all has to do with osmosis. Due to the cell's internal chemistry, placing it in a hypotonic solution (freshwater) will cause it to rupture due to the imbalance of water in the surroundings, causing water to flow rapidly into the cell. Saltwater is a hypertonic solution meaning that the cell will shrivel due to the fact that water rapidly escapes from the cell to attempt to cause the surrounding environment to reach an equilibrium.
