Fight them and hopefully win
I think you should think of a witty comeback. This way you can have a verbal fight instead of a physical fight. If you keep them talking they will eventually forget about mauling you and will start arguing with you instead. This may not seem very pretty but it's a safer way to go and less humiliating.
First of all, they won't be punching you because they'll be hurling abuse at you and second it shouldn't matter whether or not you're capable and strong enough to fight this person, unless you want to get into trouble you shouldn't sink to their level. The only time you should fight this person is when you have no other choice and they are literally beating you up. In other words, when self-defense comes into the matter. Even if this fight gets reported and the truth comes out and THEY started it and you fought back protecting yourself and everyone knows it, you shouldn't fight because you know very well they'll never get away with it. That's just being cocky. They're not worth it and it's not worth going through all the procedures because of something that could've been prevented.

get her pranked stick a nail in her chair for her to sit on and if all else fails threaten her
