When donuts did not have holes, the middles used to come out uncooked and doughy. Hanson Gregory suggested that the middle just turns into a hole to avoid that problem.

donuts have holes so we can steal them easier...you just hook your index finger in those babies and run out the back door!! ( of course, I would NEVER do this!)...;-)
