How do I bake my brownies without getting that crust on top?
Should I cover them when baking?

I like my brownies at least 2" thick

I love the crust on the top, there's nothing wrong with that! I also love the skin on pudding.

Oh, that's my favorite part! But... if you cover them as soon as you take them out of the oven, that should work. Don't try to do it with foil and burn yourself, just lay a cookie sheet over the pan until they cool. (of course, at my house, they'd be all gone by then!)
