2 boxes low sodium chicken broth (we use Simple Truth Organic) 2 or 3 Chicken breasts 1 cup each chopped carrots, onion, celery, and whatever other veggies you like Plenty of egg noodles (we use a bag of the really thick frozen Reames brand) Favorite seasoning (I use Penzey's Ozark Seasoning)
Bring chicken broth to a boil. Add chicken breasts. Cook on low simmer until done. Meanwhile, sautee the onions and celery until soft. Pull the chicken out, shred/chop, and return to broth. Add onions, celery, and carrots. Add seasoning to taste. Add as many noodles as you like. Bring back up to a low boil, for 20 more minutes. Taste and adjust seasoning as needed.
