Are you trying to stay away from carbohydrates or just bread? If you want to keep a carb/starch you could replace it with pasta,potatoes, rice, or couscous. Couscous would be the healthiest alternative. If you don't want carbohydrates perhaps try some roasted vegetables such as eggplant or squash.
Quinoa (pronounced KEEN-wa), a hearty, gluten-free pseudo-grain from South America that was second only to the potato in fuelling the mighty Inca empire, is an excellent source of complete protein (which is rare in a plant food) and fiber, which are two things that satisfy hunger better than carbohydrates (I think, 'cause there's no chance of getting a sugar crash later). Its texture is similar to couscous, but ahh...it's so much more substantial. You can really sink your teeth into it. Prepare it just as you would white rice, even using a rice cooker, if you like (1 part quinoa to 2 parts water cooked for 15-25 minutes, depending on heating elements, cookware, altitude, and personal preference, although al dente is just...mmm).
