In driver's ed books they say that crashing at certain speeds is comparative to driving off of a roof from a given number of stories........

How do they know this? Do they actually drive cars off of skyscrapers to test this theory?

Good question. They probably just compare the MPH of a crash to the MPH of the fall height.

The force of acceleration due to gravity is a constant. For any vehicle speed it is possible to calculate the height from which it needs to fall to reach that speed up to it's terminal velocity. Terminal velocity is the speed at which the downward force of gravity is exactly equal to the upward force of wind resistance. At this point it will cease to accelerate and will fall at a constant rate.
