Use flour & water to make a thinish batter with a pinch of salt & pepper for seasoning. Dip chicken in it, let excess drip off, then roll in crumbs or mashed up dry salt or savory biscuits. If you use biscuit crumbs, don't deep fry just oven bake with a small amount of oil in base of oven tray & spray tops with some oil spray. Cook on 170 Celsius for 20 -30 minutes.
I dip pieces in milk, then salt and pepper pieces, then roll in flour. Use your choice of shortening ( I use Crisco) Fry med heat covered for 1/2 hr. Then uncover for another 1/2 hr. this makes crispy chicken. Don't forget to turn after first 1/2 hr as it browns
Its the egg yolks that are very high in cholesterol. So break the eggs into a bowl, spoon out the yellows and chuck 'em and just use egg whites. They sell egg whites in containers at the supermarket too. If you can't eat egg at all, they have egg-free and cholesterol-free egg substitutes in containers at the super but they may not behave exactly like real eggs. We use them scrambled, omeleted, and French toasted and I can't even tell the difference from real eggs so far.
