Everything becomes the same. Same temperature, level, whatever. If you put a cup of ice water and a cup of boiling water on a table in a room, eventually the temperatures of the liquids and the room will be exactly the same. They have achieved equilibrium.
In literature, equilibrium is essentially 'the state of multiple things being equal and/or balanced'. If I remember physics correctly, the meaning was similar, simply referring to measurements, forces, etc. as opposed to literature.
