Put a little box in the car with some smelly food in it - like pieces of bell pepper or some funky cheese - that has a hole on top. The mouse can get into the box, but the box should be tall enough that the mouse can't get out. Then wait.

You can also buy some live traps.

Generally a mouse will just hide in a corner and not bother you in your car.

Get Chuck Norris to give it a round-house kick to the face.

Peppermint. Mice can't stand the smell. Just get peppermint oil at the grocery store an put it on cotton balls inside and under your hood. Many Japanese cars use a soy based covering on the wires that attract mice. So be sure to check the wires under your hood to make sure you don't end up with any problems.
