Why can't someone have food after 12am when getting put to sleep?

They could end up vomiting their food and it would kill them while they're sleeping. You have to have enough time for your food to digest.

I believe that is so the patient doesn't vomit while under and choke themselves.

Not sure. But I like to drink a nice warm glass of milk. That puts me to sleep.

It's also important not to have food after 12 am if you're a mogwai.

Anesthesia can cause nausea. You could vomit, choke on it and die. Follow instructions.

You can have your food any time any day but as much as you can digest. It is a good habit to take your food at least 4 hrs before you go to bed. By that time you digest your 1/3 rd food, which keeps you healthy and no acidity problems. Day meal should be heavy and dinner should be light. with vegetables and fruits and juices.
