Which Intel Processor do I buy for video editing and occasional gaming?

I am building a PC for video editing and general use. The video editing end will be amateur HD sports videos and large-file time lapse compillations, so something somewhat robust would be beneficial. I don't really mess around with overclocking, so that's not a big deal to me. I see that most people agree Intel is best over AMD. Need something that fits an ATX form factor MoBo. Haven't built a PC since '07 and I'm very out of the loop as to what's out there and what new technology is available. I don't even know what the norm is for RAM these days or CPU socket type, speeds, # of cores, etc. Any suggestions would be GREATLY appreciated! Thanks!
