What are some good egg salad sandwich recipes?

Hard boil a couple of eggs and cut them with a slicer.
Carefully pick them up and put them back in the slicer, sideways. Now cut them again.
With a fork mix in a teaspoon of curry powder. Add a little mayonnaise if you prefer.
Shred some lettuce, place in sandwich, spoon on the curried egg ... dang, I think I'm going to do some tonight.

Sounds good with the curry. Egg salad can be really good or really bad. I don't like the overly mayonnaise soupy type.

Dodgy, hadn't seen your answer, have similar curry flavoured under comment in my answer!lol. And yeah, do same trick with slicer, much easier/quicker.:-).
@bluesun, tried Greek Yogurt? Make sure is the really thick variety, good also!:-).

This one: cook some eggs (scrambled), put them between two slices of bread with lettuce and any other salad ingredients you want.

what I normally do is put eggs in a food processer and add(after processing the eggs)mayonayse and mustard then process some more then your done! Dont forget to put it in bread! :-)

I like using red onions, dill pickles, mustard, pepper to taste. You can also cut up lettuce and and it all together.

Mix Mayo with a bit(teaspoon) of both sweet and Dill pickle Juice, finely chopped pickles, dab of Dijon, and pinch of Herbs de Provence(available in most grocery stores). Put in fridge and let sit for hour or so. Chop Eggs( take out few of the Egg Yellows for healthier version) add salt& black pepper- stir to mix. Add Mayo mixture and let sit in fridge for another hour. Sprinkle top with Paprika and serve! Yum-yum!!

Actually is really easy and I always make a Large bowl so have it for 2days.. No cooking yeah!!
Another good version: substitute a pinch of Curry Powder for the Herbs and substitute very finely chopped Celery for the chopped pickles( or use only sweet gherkins chopped fine), good also!! Sort of reminds me of Deviled EGGS?

OzMan....You do the same as I do except I use paprika instead of curry. I love egg salad....about the only things chickens are good for...laying eggs.....

My very first job was at an egg ranch....I will never forget the smell of chicken poo. Not gonna put it on my garden....

@ladywood, true, but like ynp.. Been around too many chicken farms, my friends back home produced the majority eaten in our country... So think I'll stick to Composted Horse variety...( lots of horses here on V.I.) and just eat the chickens!
