It depends upon what it is used for. If the bones are removed for an anthropology study, a lot of the flesh would be lost due to the necessary boiling if the bones. I suppose that the remaining flesh could be returned to the family, but I don't think that it necessarily happens that way most of the time.
If a body is donated to the Body Farm, it is left outside to decompose and be studied for months and even years. If the family wants the skeleton back, I think they do return it.
