Is there a cheap way to protect leather car seats?

I've got leather seats in my car, in AZ. Not fun, plus with having a dog the back seats and the driver seat have some scratches. Any idea or product out there that's not to much to help fix my problem?

Normally one would use something like saddle grease to protect leather, but for car seats that may not be ideal. Obviously it would have to be something that wont stain your cloths. Perhaps you should consult a saddler or shoe maker.

put plastic over it

You could use saddle polish. One advised way is to use a luke-warm cloth over them - scratches will soon become like part of the leather.
