Will it hurt a tree take it out of the dirt over winter

Don't remove the roots from the dirt, dig up the roots and the dirt in one ball, wrap it in a gunnysack or similar material, and keep it watered. This is kind of hard on a tree, I wouldn't recommend it.

Its roots still need to not dry out in the air.

Well you have to keep the roots in a dirt ball size depends on the size of the tree. You'll need to keep it watered. If in sub freezing temps you'll need to cover the root ball in
Leaves and or mulch and water it in good before it freezes. You may also need to cover the entire tree in extremely cold temps

Not if you've been careful & maintained the root ball.. If it's small enough, I'd place it into a barrel or some other large container to make transplanting easier. Just go easy on the root system

Actually, if you are transplanting it and you do it right, winter is the best time because when it wakes up from being dormant, it will think that's where it's been all along. Protect the roots and keep them in a ball like Koichan and the rest suggested and WATER IT!!! Don't plant it with the burlap sack unless you keep the burlap nice and loose so as not to strangle the roots. I hope you
meant transplanting it and not just digging it up to sit somewhere because you
need to replant it right away. Have the other hole already dug. Make sure you have electric and gas and water company check for pipes first if needed. They'll come out and do it for free.

Yes I have to transplant the Hawthorn ... at the time I didn't have any other choice but to dig it up because we had to move suddenly and I had no way to put dirt around the roots but I did put blankets around it and just brought in my house and bought some dirt and watered it. I have had this tree for three years and it has gotten very tall . but I just hope it will be ok
