What vegetables would be good in a potato soup?

Making potato soup, should I add vegetables? I like vegetables, but I don't have to have them. Should I add it or not...

Definitely, and garlic. The Cajun Trinity is always good with everything: onion, bell pepper and celery. If chicken broth is used, onion, celery and carrot. And a little cayenne for good measure. :)

Non-cajuns just call it The Trinity, but Louisiana is where it comes from, cher. :)

Add as many veggies as you like, they're good for you. Just because it's supposed to be potato soup doesn't mean you can't turn it into a really good veggie soup with potatoes! :)
If I was making it, I'd add: sliced carrots, celery, onion, a LOT of fresh garlic, and maybe some diced tomato chunks depending on the spices you use.

Why, thank you very much! I didn't see your comment 'til today. This Q actually inspired me to make this soup, using what I said I'd add to it & using chicken broth as the soup stock -- really good stuff! :)

Mir quoi-That is the base for almost every soup.Carrots,onions and celery.Sautee them in butter before adding anything else for a good flavor.

Well I'm vegetarian but since you probably aren't I know my family likes to put bacon, onion, carrots, celery, Cut all your veggies into dices. Oh and don't forget your potatoes. Then add plenty of salt since the potatoes need it, then pepper. And use chicken Broth, unless you have something better to pour inside. While its boiling, you can start mixing milk and flour together, stir, till its smooth. By then your veggies should be looking nice and soft. Pour the mix into the soup. Now you'll want to scoop about half and put in the blender, after it looks smooth, pour it back into the pot of soup that's un-pur?ed soup. Then add some heavy cream to your soup, while its still cooking in low heat stir. In addition you can add little more salt and pepper and then some spice, if you have any that you like, Then lastly, you can pour some parsley in the soup, not done yet, and grate up some cheese to put on top, and then going in the end add your crispy bacon, and even put some sour cream of your choice if you'd like, and there is a perfect potato soup that I sometimes make for family/friends etc. :)
